BACALHAU...

Although Portugal's waters abound with fish, the dried, salted codfish known as bacalhao, is considered the national dish. Bacalhau, which is dried codfish, has a slightly salty and tasty flesh, with a firm texture, achieved after being soaked in water to return it's moisture. It can be cooked in a variety of ways and the Portuguese say there is a different dish for every day of the year. I have not as yet tested this number of dishes but I'm sure that even half of these would be more than enough! I have however, eaten my fair share and my favorite is probably the Bacalhao Assado, which is grilled and served with tossed garlic bits, a good dose of olive oil, boiled potatoes and other vegetables. Simply delicious! As a general guideline, consider that food portions are always very generous ...

Portuguese cooking could be described as purist. The uncomplicated and distinctive flavours in this Mediterranean cuisine are a result of the importance given here to locally produced meats, fish and market garden vegetables.
